Peanut Butter and Honey Rice Crispy Treats
Nothing makes you grow up quickly quite like becoming a parent. These treats permit you to feel like a kid again. They are a snap to make and the peanut butter is so much healthier and more nourishing than the marshmallows found in packaged versions. (Almond or sunflower seed butter are fine substitutions, too.) Pieces of chewy jujubes, raisins, or crunchy-sweet fig pieces work wonders as add-ins for texture, flavor, and added nutrition.

Makes one 8-inch square pan

Ingredients
1 cup peanut butter
1/2 cup (1 stick) grass-fed butter
1/2 cup honey
2 cups organic puffed rice
1 pinch of sea salt

Optional add-ins: berry compote, jam, chocolate chips, peanuts, shredded coconut, cinnamon or pumpkin spice blend, and/or chopped dried fruit of your choice (sliced banana, apples, pears, etc).

Instructions
In a small saucepan, melt the peanut butter, butter, and honey over medium heat, stirring until well combined.

In a mixing bowl, combine the puffed rice and peanut butter mixture, and stir until the cereal is evenly coated. Mix in any optional ingredients you’d like.

Transfer the mixture to an 8-inch (20-cm) square pan and press down gently to cover the bottom.

Chill in the fridge for at least 20 minutes, or up to several hours. When they are hard to the touch, cut into squares, and enjoy.

They will soften at room temperature, so its best to keep them chilled until you are ready to eat.

To spice things up, spread your favorite berry compote, jam, or sprinkle some treats on top!
