Becoming a parent makes you grow up quickly, but these treats let you feel like a kid again. Easy to make, they’re a healthier twist on the classic—using peanut butter instead of marshmallows. Almond or sunflower seed butter work too! Add chewy jujubes, raisins, or fig pieces for extra texture, flavor, and nutrition.
Makes one 8-inch square pan
Ingredients
- 1 cup peanut butter
- 1/2 cup (1 stick) grass-fed butter
- 1/2 cup local honey
- 2 cups organic puffed rice
- 1 pinch of sea salt
Optional add-ins: berry compote, jam, chocolate chips, peanuts, shredded coconut, cinnamon, pumpkin spice, or chopped dried fruit.
Instructions
- In a small saucepan, melt the peanut butter, butter, and honey over medium heat, stirring until smooth.
- In a large bowl, mix the puffed rice with the peanut butter mixture until evenly coated. Add any optional ingredients.
- Press the mixture into an 8-inch square pan.
- Chill in the fridge for at least 20 minutes or until firm. Cut into squares when set.
- Keep chilled until ready to eat, as they soften at room temperature.
Tip: Spread berry compote or jam on top, or sprinkle with your favorite treats to spice things up!
