Mashed Potato recipe
The center of a wholesome Thanksgiving dinner is around the sides, including the infamous mashed potato dish. There are 1000s of ways to make it and it's a favorite comfort food amongst all ages. Make alterations as you see fit, as always. Enjoy, and Happy Thanksgiving!
BENEFITS:
The entire potato has high concentration of macro and trace minerals from the earth. High in potassium, vitamin B6, a great source in amino acids. A wonderful brain food to help ground and keep one feeling centered.
(2 small yellow potatoes per person)
This recipe is based off of 9 potatoes.
9 small yellow potatoes, peel, cubed
8 tablespoons butter (option, Vegan butter)
2 tablespoons lemon juice (add 1 tbsp at a time to taste)
1 teaspoon sea salt to taste
3 tablespoons Nutritional Yeast powder
black pepper to taste
1 tablespoon Yuzu lemon juice to taste
optional: 1/2 cup heavy cream and/or 2 tbsp sour cream
In a large pot, combine potatoes with cold water. Add enough water to cover the potatoes adding another 2 inches above potatoes. Cook over medium-high heat until potatoes soften. Test with a fork.
Strain, add potatoes back into the pot. Add butter while the potatoes are still hot.
Use a hand-blender, potato masher, or a fork and blend until silky smooth. Add all ingredients and give it another blend. Enjoy warm.
